Ice cream sandwiches are one of my favourite desserts, and I can't get enough of these! At only 100 calories and 7 grams of sugar per sandwich, I've been known to eat more than one in a sitting, because they're just so good!! All of the nostalgia of the summertime, corner store ice cream sandwich, without all of the animal products. Love it! Non-GMO

Snickerdoodles (recipe modified slightly from The Vegetarian Baker)
I originally saw this recipe on YouTube from The Vegetarian Baker. I love his channel, he's such a sweet guy and he comes out with some great easy recipes! The modifications that I've made (very slight modifications, mind you) come from a happy accident I made when baking them the first time around. Because of a typo in the recipe, I ended up only putting in one type of sugar! Luckily they ended up the perfect amount of sweet (for me), so I've stuck with that going forward. Also, he mentions coconut sugar in his recipe, which I have tried but I did find they didn't turn out as well using it, so I prefer cane sugar (and ALWAYS brown sugar of course!).
These cookies inevitably come out around Christmas time, because who doesn't love snickerdoodles?! They are the perfect holiday cookie. The first Christmas I made these I ended up having to make about 12 dozen because they were so popular and friends and family kept asking for more! Luckily that was easy to do, as the ingredients involved are all items I would already have in my pantry. I hope you enjoy these as much as we did!
Ingredients
All-Purpose Flour - 2 1/4 cups
Baking Soda - 1/2 teaspoon
Baking Powder - 1 teaspoon
Sea Salt - 1 teaspoon
Ground Cinnamon - 1 teaspoon
Cane Sugar – 1/2 cup
Brown Sugar - 1/4 cup
Corn Starch - 1 tablespoon
Vanilla Extract - 2 teaspoons
Apple Sauce - 1/2 cup
Vegan Butter - 6 tablespoons, melted
Coconut Oil - 1/3 cup, melted
+ an extra few tablespoons of cinnamon and cane sugar for the topping.
Instructions
Whisk together flour, baking soda, baking powder, sea salt, and cinnamon. Set aside.
Whisk together both sugars, corn starch, vanilla, apple sauce, vegan butter, and coconut oil.
Combine the wet and dry ingredients. Mix well until a dough is formed.
Chill your dough in the fridge for one hour.
After a hour of chilling, preheat the oven to 350°F.
Scoop out your cookie dough in tablespoon-size portions. Roll with your hands to form a ball.
Roll in cinnamon sugar to coat the ball entirely. Press the ball flat onto a parchment- or silicone-lined baking sheet. Once all your cookies are on your baking sheet, sprinkle any extra cinnamon sugar you may have on top.
Bake the cookies for 10-12 minutes or until golden brown. Allow cooling before enjoying.
